New Generation Salt Replacer

This project entailed the design, implementation and management of a technology programme for a European start-up.  The aim of the project was to develop a full technical portfolio including applications, functionality, regulatory and nutritional data for a new generation salt replacer.

The project resulted in sales across different global regions and different food categories with valuable new intellectual property for the business.

Large food ingredient corporations and small businesses (including start-ups) have benefited from my writing and the publication of scientifically credible articles.  This has resulted in over 100 publications in trade and peer-reviewed journals including the British Journal of Nutrition and the American Journal of Clinical Nutrition.

As a result of this exposure I have edited “Sweeteners and Sugar Alternatives in Food Technology” and contributed to many book chapters including “Developing Low Sodium/Salt Products for Consumers with Specific Dietary Needs” .
